Baked Okra

A few weeks ago our fabulous CSA box included a bag of okra. I have always enjoyed fried okra (what good Southern girl doesn't??), but wasn't in the mood to destroy my kitchen. Instead I decided to bake the okra much like I was the chicken. Here is what I came up with:

cut okra
Italian bread crumbs
2 eggs
pinch of paprika
sprinkle of salt and pepper

Preheat oven to 375.
In a ziploc bag combine crumbs and spices.
Coat cut okra in egg.
Toss covered okra in crumb mixture until evenly coated.
Line baking sheet with aluminum foil for easy clean up.
Spread okra in a single layer on baking sheet.
Bake for 15-20 minutes (or until browned).
