2012 Rewind

Happy New Year's Eve one and all! I've decided that people fall into two distinct categories: they either loved the previous year and are hopeful for the new year, or they are totally over the previous year and are hopeful for better times in the new year. Regardless of which camp people fall into, no one ever wishes to stop time. People are always hopeful for the new year, and I am no different.

Here is a glimpse at some of what we've been up to . . .

I set some goals and created a 30 Before 30 List. 

I completed my first 5k.

My sweet husband guest posted and kick-started his blogging career again.

We ventured to Charleston, SC for a few days.

We witnessed my brother graduating from NCSU and his commissioning ceremony into the USMC.

We celebrated our 2nd Anniversary.

I had surgery on my foot to remove a cyst.

We spent a week at the beach with family.

My kidneys relapse, and we tackled the minimal change disease again.

We announced our little family would be growing in the coming year!

Like many of us, I was raised by a mother who insisted on teaching me proper manners even at a young age. She purposely took me to wedding and baby showers and out to lunch with on occasion so I could practice. These lessons have stuck with me and I continue to try to be better mannered as I move through my 30s.

Of course, we all should know to hold the door open for one another, greet each other, shake hands
properly, write thank you notes, serve your guests first, etc. However, how should we conduct
ourselves in this ever changing social media climate? If you are a blogger, you probably use one or more of the following social networks to amplify your message or post; Facebook, Twitter, YouTube, Pinterest, etc. But did you know that there are some guidelines you should keep in mind when conducting your conversations via these networks? That your conduct and manners are equally if not more important in your conversations on the internet?

It’s true and makes sense. If you want your readers to be engaged and stay that way and if you want to attract new traffic and sponsorships, you must be mindful of your online actions.

As a teacher, I have to be mindful and our principal said something very important about social
networking activity this year, “If you wouldn’t post it on a school bulletin board then don’t post it
online.” As a blogger, I have to be just as mindful about my actions. I want my readers to come back
and know that the person behind my blog acts with class and integrity on and off line. My partnerships with affiliate companies and other sponsors are very important as well. Who wants someone promoting their product or service who doesn’t conduct themselves in professional manner? Trust me; no one wants to be attached to that.

Guest Post-The Sweeter Side of Life

 Hello one and all! Today I have the wonderful Heather stopping by and sharing some of her favorite things about summer vacation, a topic very near and dear to this teacher's heart;-) We met many moons ago and I am so excited to be able to keep in touch with this sweet girl through blogging!

Hi everyone! I’m Heather and most of the time you’ll find me over in my own little corner of the the blogging world at The Sweeter Side of Life. Today, however, I’m writing my first guest post for Lauren while she’s on vacation! 


Lauren and I met during a class at NC State, where we were both studying middle school education. Though I never left the Raleigh area, I also got married the summer after graduation and will be starting my 3rd year of teaching middle school Science this fall. Some people think we’re crazy for teaching middle school, but I absolutely love my job and couldn’t have chosen a more fitting path. And one of the best perks about being a teacher? Summer vacation! Like many beginning teachers, I find it easy to lose myself in my work and get overwhelmed in the craziness of the school year, so the summer is the perfect time to unwind, relax, and do some things for myself. Today, I’m going to tell you a little bit about how I make the most of my summer vacation!  

1st things 1st: Spend lots of times with friends and family, especially my wonderful husband! My husband puts up with so much during the school year that I almost don’t know what to do with all this time together! And being able to make plans with friends on a whim, or travel a couple hours to see family without having to be back for work on Monday, is beyond wonderful. I definitely see a girl’s night in my near future. Smile

2nd up: Work on my fitness. I’ve always enjoyed being active, though during the school year I haven’t been sticking with it like I should. This summer though? I’m sticking with it! Running, workout videos, and the hubby and I even went swimming this morning. Forcing myself to get up with the sun early-ish and workout makes me feel more productive throughout the day, and it prevents me from sleeping the day away in bed.

3rd on my list: Catch up on my reading. I’ve got an entire list of books that I’d love to get through by the time summer is over, and while it might be a little ambitious, at least it’s a goal! I love to read and I firmly believe that no pool, lake, beach, or couch is complete without a good book close by. My current undertaking? The Hunger Games series (yes, I know, I’m a little behind on this one).

4th: My crafts! This is definitely a personal favorite that I unfortunately don’t make time for enough during the school year. While I am by no means an artist (my sister gets all of that credit), I do like to dabble in little crafty projects here and there, scrapbooking being my biggest one. I started scrapbooking when Greg and I started dating and just haven’t been able to stop since. Now that I’m teaching, summer has become my time to catch up on scrapbooking from the previous year. Sorting through endless photos and shopping for cute stickers will definitely keep me busy for a few days. And now thanks to Pinterest, I’ve got a lot more ideas and things I’ve tried or want to try. Creating fridge magnets is my newest project and a few things on my to-do list for the summer include creating a small terrarium, refashioning old t-shirts, and repainting a clay flower pot we inherited.

5th but surely not final: Travel! With summer vacation comes trips; whether to the beach, another state, or somewhere tropical, it’s always nice to just get away for a few days. Our destination of choice this summer? Our family’s lake house! Last summer we traveled out west to San Fransisco, and two summers ago we honeymooned in The Dominican Republic, so this summer we decided to keep it fairly local and simple. The lake is only a little over an hour from our house and we’ve already been a few times this summer, with friends and with family. You just can’t beat soaking up sun on the dock or floating around in the cool water! Just what this teacher needed for a little R&R this summer. Smile

Guest Post-Life of Two Sokools

While the hubby and I are away relaxing with his family on the beach this lovely lady will be posting for me today! Be sure to stop by and say hello to Alison at the Life of Two SoKools!

Why hello The Merry Mrs. Mobley readers!  I'm Alison and I blog over at the Life of Two SoKools.  I'm stoked to be over here guest blogging while she is out vacationing.  Have I mentioned how awesome Lauren is for having me?  Of course YOU knew this already.


Just like Lauren and her husband, I am a newlywed. My husband and I have been married for a little over a year now, how did that happen so fast?!

One of the things we love to do together is get outside.  Being in the Pacific Northwest it can be a pain in the butt sometimes (no thanks to all this rain), but the bad weather just makes getting outside even more beautiful and enjoyable.


Hiking
We love hiking.  One of our first dates was hiking up this crazy hill out in Eastern WA to go stargazing.  I still have no idea how I managed to pull that off.  Thanks dating jitters!  

 
Anyways, I love getting outside for a hike.  What better way to explore God's beauty?!  Our bookcase is full of hiking books for this area (and a couple for Kauai, California, and Oregon).  



Backpacking
I was introduced to backpacking by my husband and his family when we first started dating.  I actually never thought about it before I started dating him.  Now, however, I love it.  I may have said that hiking was a great way to explore God's beauty, but I think backpacking is one of, if not, THE best ways to see what God has given us.  

Unplugging and jumping out in the middle of nowhere to go camp is such an awesome feeling.  The world seems so much bigger (and peaceful) when you're out there.  I know it's not for everyone, but if you enjoy hiking and camping, I highly recommend trying it out at least once.


Kayaking/Canoeing
The day Nick proposed to me, we went kayaking on Seattle's Lake Union.  It was incredible.  Not to mention an intense workout.  
You don't have to work really hard to kayak/canoe.  Take your time.  Being out in the water is so much fun (just don't let your fear of dark/deep water get to ya.  I'm telling you, I hate dark water)   

We recently acquired a free canoe from a relative and while it's not the best in the world, we love it!


Biking 
My husband is a crazy man.  He bikes to and from work almost everyday.  That's 12 miles each way.  I admire him for it.  I, on the other hand, am still a newb with biking.  I wish I could get as into it as he does.  
Living in a small town (or any town for that matter) makes having a bike so nice, though.


Walking/running with your favorite companion
Need I say more?  I love my dog (who unfortunately doesn't live with us right now), and taking him out for a walk is calming and relaxing.  Even if he isn't a great walking dog.  He likes to lead too much.
On that note, running/walking with your significant other is a great activity to do.  My husband pushes me so much when we go out.  I may get really frustrated during, but afterwards I'm so grateful.  It's such a great time for us to talk and do something together that we can do no matter where we are.

This also goes for sitting outside and reading.  One of the most relaxing and feel-good activities ever.

Those are just a few ways that we get outside when there's tolerable weather :)  Are there other ways that you get outside?  My husband and I want to try paddle-boarding someday.  Maybe that will be added to our list eventually... I can dream about owning a paddle board can't I?

Guest Post-Mrs. Robinson

Hello fabulous readers! While I am away Mrs. Robinson was kind enough to step in for me.She is one rock star lady with an incredible faith and outlook on life, so be sure to stop by and say hello at her fantastimo blog! 

Hey!  I'm Mrs. Robinson for My New Wife Life.  While Lo-Mo is on vacation, I'm going to share my signature recipe with y'all.  First, let me explain that I married a 5-year-old.  Well, I actually married a 23-year-old, but he's 24 now.  Anyway, he's a very picky eater and his favorite foods are hot dogs, hamburgers, pizza, and chicken nuggets.  Yes, I'm serious.  And long before we got married, he once told me that my boobs were gross.  He was obviously overcome with adoration and had a massive brain fart when he said that, so I made it my mission to have that boy fall in love with me.  Well, actually, I just wanted him to not think my boobs were gross anymore.  Since we all know the quickest way to a man's heart is through his stomach, I decided to cook his favorite food!  His obsession at the time was the spicy chicken nuggets from Wendy's, and I was determined to put Wendy's to shame.  Throughout the course of our 2-week long dating relationship, 6-month engagement, and now 10-months of marriage...we've perfected the spicy chicken nugget.

Mrs. Robinson's Signature Spicy Chicken Nuggets
Serving Size:  2
Ingredients

  • two skinless, boneless, white meat chicken breasts
  • 1/2 cup House Autry Medium-Hot Breader
    • If you don't have this type of flour at home, or if you can't find it, try this (it works!):  flour + paprika, cayenne pepper, chili powder, garlic powder, Lawrey's Seasoning Salt.  Combine ingredients until the flour is a light orange/red color.
  • Canola Oil (or whatever kind of oil you prefer)
  • 2 Tablespoons Paprika
  • 3 Tablespoons Cayenne Pepper
  • 1 Tablespoon Chili Powder
  • 2 Tablespoons Garlic Powder
  • 2 Tablespoons Lawrey's Seasoning Salt
Steps

  1. Start heating up your oil first.  If you have deep fryer (like a Fry Daddy) go ahead and plug it in to let the oil heat up.  If you're going to be frying on your stove stop, get out a medium skillet and pour enough oil to fill the skillet up about half way.  You'll want the oil to cover the sides of the nuggets while they are cooking.  Set your stove eye to medium heat.  
  2. Cut the thawed chicken into bite size pieces and place them in a Ziploc Bag.
  3. Add paprika, cayenne pepper, chili powder, garlic powder, and seasoning salt to the chicken.  Seal the Ziploc bag and shake until the spices are on every nugget.  
  4. After the spices are spread around, add the flour to the Ziploc bag.  Seal & shake again.
  5. Once the oil is hot, gently add the nuggets by using tongs.  Be careful not to splash any hot oil on yourself.
  6. Allow the nuggets to cook for about 5 minutes.  Using the tongs, turn them over.  Let them cook for another 5 minutes.  Keep in mind that all of the red spices in the breading will cause them to look almost burnt, but they aren't.  While the nuggets are cooking, get a plate ready by placing a paper towel on the plate to help absorb some of the nugget's excess oil once removed from the oil. 
  7.  Remove the nuggets from the oil and place on the paper-towel lined plate.  Serve immediately with ketchup...or your preferred dipping sauce. 

Trust me when I say that fast food nuggets are nothing like these.  Trust.

While I've Been Away. . .

I'm back!! At least for a few weeks before we're headed back to the beach with the hubby's extended family. I live such a rough life, don't I? Guest Post-Melody at Sweet Like a Song!

Good morning all! While I am away soaking in the sun (with sunscreen on, of course!) and celebrating our second anniversary with my love, the sweet Melody will be stepping in and sharing her own beach must-do's! Be sure to stop by and say hello:-)

Hi everyone! I'm Melody and I blog over at Sweet Like a Song! I'm so excited to be with you today, while Miss Lauren is vacationing to the beach!
In honor of everyone that's heading on vacation this week or sometime this summer, I thought I'd share my top 5 favorite activities to do while I'm at the beach! I'd love to know if any of these are your favorites as well!

1. Eat great food!
Eating good food is a priority of mine all year long, but it is especially important at the beach! I love the little pizza places that deliver and the local sub shops, but the seafood is my all-time favorite! If I'm going to the beach, I make sure that at least one night of the trip we have good seafood.

2. Go shopping!
Shopping is one of my absolute favorite things to do while I'm at the beach! When I was little, I loved all the beachy stores like Wings and Eagles (the places with all the t-shirts & beach towels). Though my tastes have changed a lot, I still love shopping at the beach! Tanger Outlets and local boutiques? Sign me up! I always feel like I need to buy something just because it's a special occasion.

3. Get dressed up & do something fun!
Whether it's one time during your trip or every night, I'm a strong believer in getting dressed up and doing something fun at night! Whether that be, walking on the pier, going putt-putt, riding go carts, whatever! I love staying out on the beach all day, coming in to get cleaned up and then doing something fun with my family at night!

4. Beach reading
There's something about laying on the beach with a good book that makes you feel so relaxed! I love this feeling and I do it as much as I can! During my own beach trip in a couple days, I'll be starting the first Fifty Shades of Grey book! I'm so excited to finally know what everyone's talking about!

5. Make fun snacks!
I think it's so much fun to go to the grocery store at the beach (Piggly Wiggly anyone?) and buy supplies to make snacks at your house or condo! This is a great time to try out fun dips or dessert recipes you've seen on Pinterest. Whether your family is eating in or going out for dinner each night, you're always going to need snacks around the house to munch on! 
My personal favorite? Fruit pizza!

Money, Money, Money

Today's post is coming to you courtesy of one of my favorites-my husband! The Mr. Mobley (David) had a few guest posts when I was sick (found here and here), but has been hiding in the shadows recently. Well, he's back! He was prompted to share some details of our money managing thanks to a sweet comment left by an even sweeter lady! Without further adieu. . .

An earlier blog had a comment / question about the “fun money” that Lauren referenced when wanting to use some of “her money” to pay someone to mow the yard.

Growing up, I (David) was very much of the “you earn a dollar, you save a dollar” mentality (and I still fight that to this day).  Nearly every dollar that I earned, or was gifted to me, was put straight into the bank - as early in my life as I can remember.  I definitely understood the mentality of saving money, but it was obvious that I had not matured in ENJOYING money.

Right after Lauren and I were married and she started her job, we tried to save nearly every dollar that we could in order to accumulate a down payment for our house.  In doing so, we worked 40+ hours a week and never really enjoyed the “fruit of our labor” (ref Ecclesiastes).  Money that came in was used to pay bills and necessities and date night (one thing we will never get rid of) and the rest basically went towards savings.  After we bought our house and were planning for 2012, we decided to implement a “David” and “Lauren” budget.

Our thought was that each of us works and earns money, and we should each be able to enjoy the fruit of our labor.  Lauren and I agreed on an amount (we’ll call it $10 for the sake of simplicity) that we would be allotted each month.  Basically, I had $10 to spend and Lauren had $10 to spend - no questions asked.  Lauren has been known to use hers for haircuts, coffee, shopping - anything she wants.  Furthermore, we decided that this amount could roll over from month to month or we could go into “debt”.  In other words, if I didn’t spend my $10 for January, I’d have $20 available in February.  On the other hand, if I bought a $20 DVD one month, I’d be “in debt” until March.  I, for example, had the great idea to buy a bass guitar and amp to learn for church, which obviously put me “in debt” for several months.

We found that after buying the house and without having an obvious goal, we suddenly had no more structure financially - our goal had always been to save.  Before, we knew that we were saving for a house - period.  Once the house was purchased, it became very easy to just go and spend money since the huge sacrifice had been made.

I think this scheme has several benefits, but two in particular:
  1. It allows (and almost forces) us to enjoy some of the money that we earn - no questions asked - however we want to spend it
  2. The set amount holds us accountable to not spend extravagantly on ourselves - causing us to think before we spend.
That being said, we have many budgets that we’ve created through Mint [INSERT LINK] that follow the same philosophy, as far as rolling over money we don’t use or going “in debt” if we spend too much.  Several examples include:
  • Vacation
  • Date Night
  • Groceries
Lauren and I recently got back from our Charleston vacation, something we’ve been “putting away money” towards for several months.  We found that we actually enjoyed our trip more because we knew we had saved a specific amount of money allotted for that specific purpose.  We didn’t worry about “spending” during the trip, because we knew what money we had available.

I’ll end with this - If you’re a scrooge with your money and pinch every penny, you’re likely enslaving your spouse - as I did for the first year of our marriage.  Similarly, if you’re loose with your money and constantly spending with no limits, you, too, are enslaving your spouse.  God has gifted and entrusted us with everything we have - to facilitate and enjoy by His grace.   Manage, but also enjoy, your money wisely.

Guest Post-Along the Way with V & J!

Hello! I’m Valerie from Along the Way with V & J! I’m so excited Lauren is having me guest post for her while she is on her Spring Break  trip! Today I’m going to share a recipe with you for one of my FAVORITE sweet treats: CAKE BATTER BLONDIES!

If you are a fan of cake batter flavored treats,
then this dessert is for you!
Every time I make them, they get rave reviews!
& the best part is: they are so easy to make! :)


Cake Batter Blondies
ingredients:

1 box yellow cake mix
1/4 cup vegetable oil
1 egg
1/3 – 1/2 cup milk {maybe a little more}
1/4 cup rainbow sprinkles
1/2 cup white chocolate chips

directions: Combine the first four ingredients in a large bowl. Add the milk slowly – you want the batter to remain as dense as possible. Then mix in the rainbow sprinkles and white chocolate chips. Bake for 30 minutes at 350 degrees. {I used an 8x8 baking pan}

If you want to eat them warm and GOOEY just let them cool for five or ten minutes before digging in.  If you wait twenty or thirty minutes the center will thicken to a delicious moist cake! We dug in while it was still gooey and it was super yummy! However; I actually preferred them the next day when the center thickened. Either way its one awesome treat!

I am one of Mrs. Lauren Mobley’s newest followers and I am so drawn to her blog because of the goals she set for herself. I love her 30 before 30 list! This has made me start crafting one of my own.

I’m 25, so my before 30 list can span the next 5 years! This has made me start thinking about shorter goals for myself specifically this Spring.

Musts for this Spring:
  1. Take Full Advantage of all the gorgeous bright colors this season has brought to the Fashion World. Tangerine = my favorite!
 
2. Are you tired of being so pale? I’m very much looking forward to days out in the sun! Wear Sunscreen!!
 
3. Buy a colorful pot and plant an even more colorful flower!
 

4. Looking for some great beach reads? Join goodreads.com and explore the entire book world and connect with friends! You can find me on there: msmiamaree

5. Get some fresh air! Go on a walk, browse local flower gardens, get a bit of exercise!
 
6. Plan a Summer Trip. I get antsy this time of year stuck inside at a desk. Give yourself a break and plan a fun summer vacation. On a budget? I can guarantee there is a cool place tucked somewhere close to you. Make it a day trip and explore your city! These sometimes end up being the best trips!

Guest Bloggers Needed!

Good morning one and all! I hope you are reading this much later than I am actually writing it. No one should be awake this early on a Saturday morning. True story. The reason for my presence on the internet at this tortuous hour? My first 5K! Eeek! I couldn't sleep so I hopped out of bed and decided to be semi-productive. One a Type-A personality, always a Type-A personality. . .

Anywho, the real reason for this post is I am in need of a few fabulous guest bloggers! One of the greatest parts of my profession is the few days off they give us to celebrate the glorious Spring weather. The hubs will be in Alabama the first few days (more to come on that fiasco later) so I will be enjoying a bit of a staycation, aka you're stuck with me. Then, upon his return we will be making our way south for a few days in hope of some R&R in my most favorite city of all time-Charleston, SC!
