Ingredients
1/2 cup applesauce
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/2 cup light brown sugar
1/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups coarsely grated zucchini (about 1 medium)
Directions
Heat oven to 350.
Grease an 8 1/2 x 4 1/2 in loaf pan.1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/2 cup light brown sugar
1/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups coarsely grated zucchini (about 1 medium)
Directions
Heat oven to 350.
In a bowl, whisk together the flour, baking powder, cinnamon, ginger, salt, baking soda, and nutmeg.
In a separate bowl, mix together the oil, light brown and granulated sugars, eggs, and vanilla.
Mix in the zucchini.
Add the flour mixture and mix until just combined (be careful not to over mix).
Spread the batter in the prepared pan and bake 50-60 minutes.
Cool in the pan for 30 minutes.

Zucchini Bread is one of my FAVORITE things! =) My momma and grandmomma make it very often from fresh zucchini, and just reading this post and the recipe reminded me of home. :)
