I've mentioned my extreme love of our weekly produce box from a local farm quite a few times. Every Thursday of this past winter we received a box of fresh produce. We just started our Spring session this past week! What we get varies week to week, and it's always exciting to see what we get! Butternut Squash was pretty popular this past winter. Here is a recipe a sweet friend of mine at work shared and I couldn't wait to try. It's definitely a repeater:-)
Ingredients
1 butternut squash
2 tablespoons olive oil
1 tablespoon minced garlic
1 teaspoon parsley
sprinkling of parmesean cheese
Directions
Preheat oven to 400.
Peel and cube squash.
Place in oven safe dish.
Drizzle with olive oil.
Stir in garlic and parsley.
Sprinkle with cheese.
Bake for 45 minutes.
Enjoy!
