Reese's Pieces Banana Muffins

This past week I had an excess of bananas that had gone bad. What's any good cook to do with bad bananas? Banana bread, of course! I wanted to make something a little different, though, in honor of "Administrative Professionals Week" to thank the wonderful ladies at work who help keep the school running! I searched high and low for a recipe and found one. Here is a unique twist on boring ol' banana bread. . . Reese's Pieces Banana Muffins!

Ingredients
1-1/2 cups mashed, very ripe bananas (I used 3 large bananas)
1/2 cup sugar
1/4 cup firmly packed light brown sugar
1/2 cup (1 stick) unsalted butter, melted
1/4 cup skim milk
1 large egg
1-1/2 cups all-purpose flour
1 teaspoon instant espresso powder (1 Starbucks Via Packet)
1-1/2 teaspoons baking soda
1 teaspoon salt
1 cup Reese’s Pieces
1/2 cup semisweet chocolate chips

Directions
Preheat the oven to 350 degrees.
Spray a 12-cup muffin pan with nonstick cooking spray. 
In a bowl, stir together the bananas, sugars, butter, milk, and egg. 
In another bowl, whisk together the flour, instant espresso powder, baking soda and salt. 
Pour the wet ingredients into the dry ingredients and stir just until combined.
 Mix in the Reese’s Pieces and chocolate chips. 
Fill each muffin cup about 3/4 full. 
Bake in the  oven for 20-25 minutes, until a toothpick (comes out clean).
Let cool for 15 minutes.
